Honey mustard chicken

Ok, I'm trying the blog thing. Like I don't have enough going on already.. But I thought it would be fun to share my recipes that are easy and yummy and that my family loves. So here I am! 

Tonight I'm making honey mustard chicken. Now I must confess, I haven't made this in a long time.  Mainly because in my head it seemed like a difficult recipe. But when I got to looking at it, I realized it was pretty easy! Then I remembered I was about 19-20 years old the last time I made it so basically anything that didn't come out of a box or paper bag at that point in my life was "a difficult recipe." 

Ok here is what I'm starting with


The recipe calls for 4-5 chicken breasts. I used 8 because we like leftovers :)
1 pound bacon
Small package of mushrooms
Colby Jack cheese
Mustard, honey, and Karo syrup for the topping

Fry the bacon. Not crispy. Just a little under cooked. It will cook in the oven later. While the bacon is going, chop up the mushrooms. 


Chop the whole container. I didn't because it's looks like a lot but once they get cooked down, you will wish you cut them all. 


After all the bacon is done, brown the chicken in the bacon grease. (Hey, I never said these were HEALTHY recipes, just yummy!) 


Then cook the mushrooms in the remaining grease. 


Mix up your honey mustard mixture. I don't really know measurements. Just mix it to taste. 


Layer chicken on bottom, then bacon, mushrooms and sauce on top. Bake in oven at 375 for 30 minutes. Make sure the chicken is cooked all the way through. Last 5 minutes put cheese on top and let it finish cooking. 


I didn't get an after picture because Alyssa was screaming but it was delicious. I made mashed potatoes, corn, and rolls to go with it. 

She's still not a good helper but we're working on it!
